Phil Vickery visited Jersey to film the last in his Coastal Cuisines series, here he meets the locals and makes a fish stew at St Brelade's Bay.
In April 2011, the ITV This Morning team visited Jersey with chef, Phil Vickery, to film the last in his Coastal Cuisine series. Phil's series takes a look at the issue of discarded fish and sustainable fishing, and encourages us to eat locally caught fish by creating a dish using some local species from Jersey waters.
Whilst he was here, Phil met with local fisherman Kevin Holden on board his boat about restaurant customers changing tastes and preferences for fish, and the problem of discarded catches. Kevin works with Jersey Pottery and The Oyster Box Restaurant and supplies their chefs who are challenged to put whatever fish he catches on their menus. Phil also spoke to pupils at Victoria College Prep, who are catered for by Jersey Pottery, about the locally caught fish that appears regularly on their canteen menu.
Phil used Kevin's catch of the day to make fish stew on the beach at St Brelade's Bay.
