Jersey Royal Frittata  

Serve 4

The ingredients you'll need

  • 300g Jersey Royals 
  • A good glug of olive oil 
  • A few knobs of butter 
  • 1 bag of watercress 
  • 1 onion 
  • 1 clove of garlic 
  • 8 free range eggs 
  • 100g goat’s cheese 
  • 100g Parmesan 
  • A few rasps of nutmeg 
  • Sea salt 
  • Freshly milled black pepper 

Work your magic

  • Boil the Jersey Royals in salted water until cooked. Strain and allow to cool slightly before cutting into chunks. Place in a large mixing bowl 
  • Heat a large frying pan. Add a knob of butter. Add the watercress and wilt. Season with salt, pepper and nutmeg. Place into the mixing bowl with the Jersey Royals 
  • Place the frying pan back on the heat. Add a knob of butter. Finely chop the onion and garlic and add to the frying pan. Cook until soft. Season with salt and pepper. Place into the mixing bowl with the Jersey Royals and wilted watercress 
  • Crack the eggs into a separate mixing bowl. Whisk. Season with salt and pepper. Place into the bowl with the Jersey Royals, wilted watercress and softened onion and garlic 
  • Crumble the goat’s cheese and finely grate the Parmesan and add both into the mixing bowl with all the other ingredients. Mix well  
  • Place the frying pan back on the heat. Add a good glug of olive oil. Add the mixture into the frying pan and cook very gently over a low heat 
  • Preheat a grill and transfer the frying pan under the grill. Alternate the frying pan between the grill and the stove until the frittata is set and cooked 
  • Turn out from the frying pan, cut into wedges and enjoy with dressed salad leaves
