Seafood tastes better when you can see the sea. It’s something Paul Dufty, owner of Sumas restaurant in Gorey with its sea views knows only too well. In Jersey it’s all about provenance, and with produce grown in the island, and fresh fish and seafood caught on the tide, you can count our food miles on one hand. Here’s why Paul Dufty feels the island is a special destination for food, and why he’s chosen to make it his home.

Hospitality’s in my family’s blood. I grew up in the cottage at Longueville Manor and that’s where my passion for hospitality began. When food is this fresh, you’re spoilt for choice. Jersey tomatoes, local lobster, oysters from the bay, herbs from the kitchen garden where I grew up.

All the island’s produce is superb, and it’s right on our doorstep, so when we say freshly picked or just caught - it’s often the same day. Outstanding produce, served in a stunning setting to let the real flavours shine. There’s something really special here at Sumas about eating oysters in the fresh salt air and being able to see the oyster beds where they came from.

Working away from the island gave me the experience and understanding I needed to complement what Jersey has to offer. I met my wife while I was working in London. We always thought about where would be the perfect place to live. The character of the island, the quality of life here, our environment - it draws you back and I came home with a new appreciation for Jersey. There’s so much here to enjoy and experience. I wouldn’t change it for the world.
