ANDREW BAIRD - LONGUEVILLE MANOR

Executive Head Chef Andrew Baird is a true renaissance man. Sometime scuba diver, fisherman, gardener, photographer and golfer, Andrew's many passions are baked into every dish. His love for scuba diving means that only hand-dived scallops are used in his kitchen and his green fingers have nurtured a productive garden in the Manor grounds to add seasonal fruit and veggies to the menu. This culinary legend has helped Longueville Manor to achieve the coveted AA five red star and AA three rosette awards.

RUPINDER SINGH - SAFFRONS

From a tender age, Chef Rupinder was raised in his mother’s kitchen to respect food cooked from the heart. The precocious young chef rose to culinary fame at Oberoi Rajvillas in Jaipur, one of the finest hotels in the world. In his twenties, he brought his passion for bold, vibrant flavours to the Channel Islands, where he quickly won a Gold Medal for Chef of the Year. He joined Hotel de France in 2010, where he created an exciting menu that blends the delicate spices of his childhood with the tastes of Jersey produce across the seasons. A fusion you won’t find anywhere else in the world.

WILL HOLLAND - OCEAN RESTAURANT

Pipped to be one of the '10 most influential chefs of the next decade' by The Good Food Guide, Will Holland has worked in Michelin-starred restaurants since the age of 18 and was awarded his own Michelin star before he was 30 years old. Taking a relaxed approach, the focus of his food is on celebrating exemplary British ingredients, using excellent technique resulting in outstanding dishes.

Meet Steve, a five-time Michelin Star winner, and Head Chef at Bohemia, which has recently been showered with 5AA Rosettes. Bohemia is one of 15 exceptional UK restaurants, and the only restaurant in Jersey, to hold this coveted status. It's also recognised in the Good Food Guide 2018 as the 11th best restaurant in the UK. Meet the man behind the menu.
