Meet Betsy the Cook

Betsy was born in the wind, salt and stone of Normandy, in a small coastal town not unlike Jersey. She grew up in a household where food mattered, not for luxury but for survival. Her mother cooked for fishermen and seasonal labourers, and Betsy learned early how to stretch rations and use every scrap to keep men fed when money was short.

Political unrest, poor harvests and the promise of steadier work drew her across the water to Jersey while she was still young. The crossing was short but the change was great – a new language, new rules and dealing with a deep suspicion of anyone “from France”.
