“Jersey’s abundance of seafood, particularly its shellfish is really what inspired me to open Pêtchi and cook the way we do. I see it as an immense privilege to have world class produce literally on our doorstep, and many of our suppliers are friends or people I grew up with. Jersey has a uniquely varied geography for such a small place, and with our huge tidal range and very clean waters it’s perfect for top quality seafood. At Pêtchi we cook over wood and coals, there is something so uniquely delicious about sweet shellfish and the aroma of wood smoke. All the seafood we use such as crab, oysters, scallops, lobsters and cockles etc touches the wood oven and coals in some way, for example the crabs are grilled whole rather than boiled, taking on a delicate aroma of smoke whilst steaming the meat perfectly inside the shell. When you have this quality of ingredient you can keep it so simple and we are so grateful to have that right at home.”
