Following completion of a diploma in cooking, Johnny was very fortunate to be given the chance to work in London with the executive head chef and pastry chef of Jamie Oliver’s restaurant ‘Fifteen’.   He has now returned to the island as the head chef of Feast, located in Gorey.  Find out where he sources his local scallops, and what he likes to do during the autumn season in Jersey

Why is Feast a must visit restaurant in Jersey? 
There’s nowhere like Feast, with its friendly, relaxed atmosphere and distinctive eclectic style, not forgetting the amazing food on offer! Plus, you get to enjoy the spectacular location overlooking Gorey pier, which is beautiful no matter what time of the year, just ask the locals!

We have an amazing Local lad “LEO” who hand dives for our Jersey scallops, they are in a league of their own and taste amazing!

Favourite local autumn food?
I love to fish so when I have a little spare time, the fresh fish available on the east coast of Jersey is amazing, you can’t beat a fresh catch of the day!

Share a recipe with us showcasing Jersey’s big 4? 
I’m going to keep it nice and simple – Smashed Jersey Royals, mixed with Crème fraiche, fresh lemon (zest & juice), finely chopped spring onion, curly parsley, seasoning, then a sprinkle of crispy diced smoked pancetta on top. A perfect potato salad.
